2021 Sauvignon Blanc
Crisp apple, custard, sage, lychee and lemon curd with savory white tea and chalky minerality.
2021 was a difficult vintage for Sauvignon Blanc. Three sequential heat spikes halted and restarted repining eventually leading the vines to stop ripening the fruit. This fruit hung on the vine for three additional months but did not produce any additional sugar.
After maturing in French oak for 8 months the fruit and acidity finally came into balance. Prior to aging the acidity was a bit concerning but the lees aging and gentle stirring in barrel added enough richness to balance the acid.
This is a pleasant, crisp, elegant Sauvignon Blanc that is refreshing and interesting.
